SPINACH RING
2 cups cooked spinach
1 small onion, minced
¼ teaspoon pepper
3 tbsp. butter or margarine
1 cup milk
1 tsp. salt
¼ tsp. nutmeg
4 eggs
Chop the cooked spinach. Beat the eggs well and mix
all the
ingredients together. Pour mixture into a well greased
ring mold.
Place the mold into a shallow pan of water. Bake in a
slow oven,
350 degrees F. for 30 to 40 minutes. Test by inserting
a silver knife
as for custard. If the blade comes out clean, it is
done. Let stand for
about 15 or 10 minutes. Unmold. Fill the center of the
ring with
creamed chipped beef, garnish with radish roses and serve at
once.
