DEVILED
CRAB
1 lb.
crabmeat
3 tablespoons chopped
onion
2 hard boiled
eggs
1 teaspoon prepared
mustard
1/4 teaspoon red
pepper
1/4 cup rolled bread
crumbs
2 tablespoon melted butter
3 tablespoons chopped celery
1 raw egg
2 tablespoons vinegar
1-1/2 teaspoon
salt
1/2 cup hot
water
Mash eggs. Melt butter, add onion and celery.
Cook until clear, but
not brown. Add to crabmeat to which has been
added salt, pepper,
mashed egg whites and mashed yolks, mustard,
vinegar and bread
crumbs. Add the hot water and yolk of raw
egg. Beat white of egg until
stiff, but not dry. Add to mixture. Pour into
individual crab shells (or
greased casserole). Sprinkle with “extra”
bread crumbs and “dots” of
butter. Bake in oven (450 degrees F.) about
ten minutes. Serve hot.
