MERRY-BERRIES ON A CLOUD
6 egg whites
¼ tsp. cream of
tartar
1 tsp. vanilla
1½ c. sugar
2 (3
oz.) pkg. cream cheese,
softened
1 C. sugar
2 c.
miniature marshmallows
1 (21 oz.) can cherry pie
filling
1 tsp. lemon
2 C. fresh
sliced strawberries or 1
can frozen
strawberries,
thawed and
drained
Beat egg whites, cream of
tartar, and vanilla until frothy. Slowly add 11/2
cups
sugar and beat until
stiff and glossy. Bake in greased pan (1 3x9x2 inches) for 1
hour at
275°. Turn off oven and
leave it in oven ½ hour.
Filling: Soften cream cheese with 1 cup sugar. Fold in
cream cheese , whipped, and miniature marshmallows. Spread on
meringue and refrigerate 12 hours.
Topping: Mix together cherry pie filling, lemon, and
strawberries, and spread on
top.
