Lemon Flank Steak Skewers
Appetizers
For easy slicing, freeze meat for 10
minutes first
2/3 cups olive oil
4 tsps lemon zest
½ cup fresh lemon juice
2 tsps salt
½ tsp dried crushed red
pepper
4 (2 Lb) flank steaks, cut diagonally
into ¼ inch slices
50(12 in) wooden skewers
Lemon dipping sauce
Garnish: Italian parsley
Combine first 5 ingredients in a
shallow dish or heavy duty zip lock bag
Add steak and seal and chill 8 hours
turning occasionally
Place skewers in water to cover and let
soak 10 minutes
Remove steak from marinade and
discarding marinade
Thread each steak slice onto I
skewer
Grill skewers covered with grill lid
closed over medium-high heat (350 – 400)
For 4 o5 minutes while turning or to
desired degree of doneness
Serve with Lemon dipping

2 - 16 ounce containers of light sour
cream
2 tablespoons of prepared horseradish
sauce
2 teaspoons of lemon zest
6 tablespoons of fresh lemon
juice
1 teaspoon salt
Garnish if desired with lemon
zest
Combine all ingredients and cover and
chill at least one
hour
