Artichoke Dip
1 - 8 oz pkg of low
fat cream cheese at room temperature
( I use regular cream
cheese)
1- cup regular or
no-fat mayo ( again I use regular)
½ cup grated fresh
parmesan cheese ( I use really good block cheese)
2 scallions, chopped
fine
1 can small artichoke
hearts, rinsed, drained, and cut into bite size pieces
Mix ingredients
together in a small bowl
Place into small
baking dish
Bake at 400 degrees
for one hour or until browned on top and heated throughout
Let stand for 5
minutes
Serve with sliced
sourdough bread or baquettes or stone ground crackers
Serves 6
