1 cup self-rising flour
1 egg beaten
2 or 3 ripe or slightly overripe bananas
Crisco for frying
In large bowl mixed softened bananas, egg, and flour
The consistency should not be too loose or too thick (if too thick add another egg and if too loose add a little more flour or another banana
Heat the grease and make sure it is hot by testing a drop of mixture first
When the grease is good and hot, use a large tablespoon and spoon one heaping spoonful of the mixture into the grease
It only takes a seconds to fry and when nice and golden brown place the fritter on paper towels to drain
Served best sprinkled with granulated sugar but you can use powdered sugar as well
