RECIPE OF THE DAY

VEGAN FRIED RICE

 

INGREDIENTS

2 cups [uncooked] rice (white or brown), steamed

1 cup chopped carrots

1 cup chopped brocoli florets

1/4 cup chopped green onions

2 tbsp. sesame oil

6 tbsp. soy sauce

COOKING INSTRUCTIONS

1) Steam the 2 cups of rice before you begin
cooking this dish and sit it off to the side.

2) Chop up the carrots. I like to get carrot chips and just cut along the lines and then chop up the sticks.

3) Chop up the brocoli florets so that it's mostly just the top half of the floret in small bits.

4) Pour 1 tbsp. of sesame
oil into a large frying pan. Heat over medium heat.

5) Cook carrots in pan, stirring frequently, until tender, but still crisp. (Roughly 4-7 minutes, depending of the size of the pieces) Set aside.

6) Cook the brocoli in the pan after removing the carrots. Stir frequently and cook until the pieces begin to slightly brown (roughly 2-5 minutes) Set aside with carrots.

7) Pour the remaining 1 tbsp. of sesame
oil into the pan. Cook steamed rice in pan for roughly 6-8 minutes, flipping frequently and stirring almost constantly to prevent overcooking on the bottom.

8) Add soy sauce to
cooking rice one tablespoon at a time, until 5 out of 6 have been added.

9) When rice has been
cooking for about 6-8 minutes, add chopped green onions and cook for one minute.

10) Add carrots, brocoli and remaining tablespoon of soy sauce to the rice and onion mix. Cook another 2-3 minutes.

NOTES: Feel
free to change up the veggies used or to add some tofu!
The best way to check how the veggies and rice are
cooking in the pan is to taste it! =]
