RECIPE OF THE DAY
Crabmeat Au Gratin
1 small onion,
minced
2 stems
celery, chopped
2 tbsp
flour
1 stick butter
or margarine
¾ of a large
can of evaporated milk
1 egg
yolk
1 lb fresh
white crabmeat
5 oz. grated
cheddar
Saute’ onion
and celery in butter until soft
Add flour and
blend in
Add milk and
blend in
Remove from
heat
Add egg yolk,
crab meat, dash of salt and pepper
Put in four
individual dishes or into a 1-casserole dish with the cheese on
top
Bake at 350
degrees for ½ hour
