RECIPE OF THE DAY

 

 

Crab Cakes

1 lb of lump crabmeat

1 egg

Italian bread crumbs - ˝ cup

1/4 cup of mayonnaise

Tony Chachere seasoning

Salt and pepper to taste

This is a really simple recipe and the crab cakes are very good. Like any good recipe, this one depends a little on the judgment of the cook to determine if the crab cakes have the right consistency when you make the patties. Take all the ingredients and mix well in a large mixing bowl until everything has the consistency to form patties with your hands. Occasionally you may feel to add little more breadcrumbs or a little more egg or mayonnaise. The ingredients are molded into patties that you can make as little or big as you like. The patties can be fried in hot oil in a shallow pan or baked at 350 degrees in the oven for fifteen minutes or so until brown. Depending on the size of the patties that you make, you may need to adjust. After you have made these you will become an expert and add your own personal style.

A good remoulade sauce or whatever your favorite sauce can be used for enhancing the flavor

 

Homemade Tartar Sauce

 1 cup Mayonnaise

 1 tablespoon Lemon Juice

6 sliced dill pickles chopped

1 green onion chopped

Salt and pepper to taste

Mix all ingredients
