  Crawfish Fettucine

3 sticks margarine

3 pounds of crawfish

2 medium onions

1 pint half-half

3 ribs celery

6 slices of jalapeno’s chopped

1  lb fettuccine

1lb velveeta cheese

3 cloves garlic, minced

˝ cup parsley

˝ cup green onions

1 cup parmesan cheese

1 heaping tablespoon flour

Melt margarine, add onions, celery, garlic. Simmer for about 30 minutes. Add ceawfish and cook for about 10 minutes. Add flour, ˝ & ˝. Cook for another 5 minutes.  Add  velveeta, jalapenos, green onions, and parsley. Remove from heat. Add to cooked fettuccine. Add parmesan and serve.

·          You can cut this in half if you like, as it makes so much. You  also some times can add cooked shrimp, and or crabmeat.
