4 – Sweet Potatoes 1+ cups granulated sugar*
1 – sticks salted butter Water to cover sweet
potatoes
2 - tsps cinnamon powder(to taste)
Preheat oven to 325 degrees.
Cover sweet potatoes with water and cook over low to
medium heat for a couple of
hours until potatoes are tender. Careful not to let
water boil down)
When cool, peel and slice sweet potatoes lengthwise –
about ¼ inch in thickness. Lay
potato slices in a 11x13 inch glass dish.
Place pats of butter on sliced sweet potatoes and
sprinkle with cinnamon. Completely
cover potatoes with sugar.* Adding more than 1 cup
won't hurt! (At this point,
potatoes can be covered with plastic wrap and kept
overnight in the refrigerator.)
Pour water over the potatoes so that there is about ¼
inch over the potatoes. (Sorry
I have never measured this!)
Bake sweet potatoes for approximately 2 ½ hours. Near
end of baking time, test the
potatoes to see if a syrup has formed. If not, raise
temperature to 350 degrees and
bake for an additional 20 – 30 minutes. If desired,
place potatoes under a low broil to
brown and crisp.
