Artichoke Cheese Appetizers
2 tbsp Olive oil
1/3 C Minced onion
2 cloves Garlic, minced
4 eggs
1 small can Artichoke hearts, drained and chopped
1/4 C Dry bread crumbs
1/2 C Sharp cheddar cheese
2 tbsp Fresh minced parsley
1/4 tsp Dried oregano
1/2 tsp Salt
Pepper to season
Heat oil in skillet and sauté onion until soft.
Careful not to scorch. Beat eggs in a
bowl, add the chopped artichoke hearts. Stir in the
other ingredients. Pour into a
baking dish and bake 25-30 minutes at 325 degrees. Cut
into small squares or
triangles and serve warm.
