MARINARA SAUCE

AUNT FRAN

1 large can plum tomatoes

4 Tbsp olive oil

2 sliced onions

2 cloves garlic minced

2 oz grated Romano cheese

1/4 tsp oregano — or more to taste

1/4 tsp sugar

2 filets of anchovy cut into small pieces — optional

Salt & pepper to taste

Sauté onions and garlic in hot oil —5 minutes or until soft, add tomatoes

cooked rapidly for 5 minutes — lower flame and simmer for 1 hour.

Add anchovies

Use very little salt & pepper

Add sugar

Cook slowly for 10 minutes

Add oregano and stir

Sprinkle Romano cheese on pasta covered with the sauce.

Anchovies add a great flavor without a fish taste — they take the place

of salt
