2 eggplants, boiled
1 large grated onion
1 medium green pepper
2 cloves chopped Garlic
Ham ( chopped fine)
1/2 c parmesan cheese
1 c. progresso Italian bread crumbs
1 tsp. Tony Chachere’s creole seasoning
2 eggs
Pats of butter
Salt and pepper to taste
Mix all ingredients except bread crumbs, butter, and
parmesan cheese. Place in greased
baking dish. Sprinkle bread crumbs on top. Add butter
and parmesan cheese on top. Bake
45 minutes at 350 degrees
